Super Power Pancakes



Sunday is my lazy day. All week long I take pride in scheduling out my week with meetings, workouts, hangouts, and chores, but when Sunday comes around I want to do nothing but sleep in, watch tv, and do anything else that makes me happy. One of those things is eating a big breakfast. There's nothing like brunch to make your day feel lazy and decadent (in a good way.) While I love eating a giant breakfast of eggs, sausage, waffles, and hashbrowns, I don't like how greasy and unproductive I feel for the rest of the day. Enter: these pancakes.






These pancakes are really healthy but super filling! Here's the recipe:

Super Power Pancakes
2 eggs
1 ripe banana
1/3 c. quick cook oats
sprinkle of cinnamon

Blend all ingredients together in a blender then pour onto a greased griddle or pan on medium-low heat. Flip after 1-2 minutes. That's it.

These pancakes come out like fluffy crepes. You would never guess that they don't have flour! I like to top them with some maple syrup, frozen blueberries, and plain Greek yogurt. Yum! The best part, it makes SO MANY PANCAKES! And I'm full for hours afterwards!

Obviously you can add whatever you want to these pancakes to make them your own. If you really want to make them super power pancakes add protein powder or peanut butter to the mix. Perfect recovery meal!
