Balsamic Winter Vegetable Bowls

The other night my boyfriend and I went grocery shopping which resulted in us having lots of yummy vegetables around the house. I was feeling inspired, so I threw a bunch of stuff in a pan and it came out delicious! Here's the recipe:


Balsamic Winter Vegetable Bowl:
(makes 3-4 servings)

4 c. rainbow chard (or kale or collard greens)
1/2 yellow onion
1 c. cubed tofu
1/2 c. chopped baby bella mushrooms
1/2 lemon
1 small sweet potato
1 Tbs. minced garlic
Crumbled goat cheese
Balsamic glaze sauce
Salt
Pepper
Garlic powder
Cumin

Directions:

Start by sauteing the onion, garlic, and mushrooms together in olive oil in a large saute pan. Cook until onions are translucent.

While onions and mushrooms are sauteing, in a separate pan saute the tofu and sweet potato together. Once sweet potato is soft and the tofu is browned, add ingredients to the large saute pan. Season with salt, pepper, garlic powder, and cumin.

Once all ingredients have been combined, add in the rainbow chard. Squeeze the juice of half a lemon onto the chard. Cook until wilted.



Transfer the mixture into bowls. Add crumbled goat cheese.


Top with balsamic glaze.
